Great fun way of Getting Vegetables Eaten by Children.
Ingredients
- 1 ready made pizza base
- 30g/1oz tomato purée
- ½ courgette, finely sliced
- 55g/2oz roasted red pepper, cut into slices
- 55g/2oz mushrooms, sliced
- 110g/4oz mozzarella slices
- 1 tbsp dried oregano
- 2 tbsp olive oil
- 1 tsp fresh thyme
- To serve
Preparation method
- Preheat the oven to 220C/425F/Gas 7.
- Place the pizza base onto a baking sheet. Spread the tomato purée over.
- Arrange the courgette, pepper and mushroom slices on top. Finish with the mozzarella slices.
- Scatter the oregano over, drizzle with oil and top with the fresh thyme.
- Transfer to the oven and cook for 10-12 minutes, or until the cheese has melted and the pizza is cooked.
- Meanwhile, blend the fresh basil, garlic and olive oil in a mini-food processor until smooth.
- Remove the pizza from the oven and transfer to a serving plate or board.
- Drizzle with the basil sauce to serve.
